Abstract

This chapter focuses on the applications of Pichia pastoris expression system in the microbial production of industrial enzymes. Firstly, the features of Pichia pastoris expression system were systematically introduced, and then the production of important industrial enzymes with Pichia pastoris was overviewed. The industrial enzymes include alkaline polygalacturonate lyase, alkaline proteases, lipases, trypsin, xylanase, laccase, glucose oxidase, cyclodextrin glycosyltransferase, phytase and mannanase and so on.
